These are some fantastic Sunday Brunches! But call ahead to make reservations. They do get full and Busy! But then, that’s why they are a 5-Star Restaurant!! And we were lucky enough to receive and try some of their latest releases! Well worth joining their Wine Club. They do make an awesome Reserve Merlot, pictured here. And the Pinot Gris passes the test and goes well with asparagus!

Happy that it was still warm enough to eat on the patio overlooking the vineyard, as pictured here. And if you have never eaten at the winery, you really need to go. No! You REALLY need to go. Looks like weatherwise, it could be a great weekend in the Snake River Wine District, especially at Parma Ridge Winery. Look what’s going on!

We are open Friday, 12-9 p.m., Saturday 12-5 p.m.and Sunday 11 a.m. – 5 p.m. with our regular menu all weekend long. We have Happy Hour on Friday evening from 4-7p.m. and Sunday Brunch Specials. Due to limited inside space, reservations are recommended if dining inside this weekend. We have a couple large heaters and sides on three sides of our tent for those of you that want to dine outside this weekend.

Grrrrrr! But everything comes to those who wait and Stephanie was kind enough to re-send this information. Thanks Stephanie.
It looks like a busy and exciting weekend. And the food! It looks delicious. I know the wines are fantastic. We had some last night at Capitol Cellars Hosts Parma Ridge Winery. Add that event to the July 4th celebrations and it could be a long weekend. Here’s what’s happening at Parma Ridge Winery this weekend.

A beautiful weekend of wonderful wine, fabulous food, and an amazing view is coming up!

It’s 4th of July Weekend! Bring your family and enjoy the wine and delicious cuisine on the patio. We are open Friday, 12-9 p.m., Saturday 12-5 p.m. and Sunday 11 a.m. – 5 p.m. this weekend offering wine tasting and our regular menu all weekend long. We now have a large tent on the side yard for extra shade thanks to Northwest Produce. Come check it out and enjoy the view!

I received this yesterday from Stephanie at Parma Ridge Winery and Restaurant. And I want to let everyone know that I have had several comments about the job both Stephanie and Chef Storm do in the kitchen and in the winery. Folks are very happily surprised. Spatchcock Chicken on a Char-Broil Grill


3April2016_1_New-CharBroil-Grill_BSU-CoverI have always liked Char-Broil grills. Well built and long lasting. The last one I had, a combination gas/charcoal grill lasted 10 years. This one, an American Gourmet Deluxe Smoker, BBQ and Grill from Char-Broil seems to work very well. The photo to the left is the grill with it’s BSU cover on it.

A spatchcock is a historical term for a culled immature male chicken, but increasingly denotes a preparation technique. The spatchcock, also known as “spattlecock”, is poultry or game that has been prepared for roasting or grilling by removing the backbone, and sometimes the sternum of the bird and flattening it out before cooking. The preparation of a bird in such a manner for cooking may also be known as butterflying the bird. The term “spatchcock” is used when the backbone is removed, whether or not the sternum is removed. Removing the sternum allows the bird to be flattened more fully…Barbecue (also barbeque, BBQ and barby/barbies) is both a cooking method and an apparatus. The generally accepted differences between barbecuing and grilling are cooking durations and the types of heat used. Grilling is generally done quickly over moderate-to-high direct heat that produces little smoke, while barbecuing is done slowly over low, indirect heat and the food is flavored by the smoking process…The word barbecue when used as a noun can refer to the cooking method, the meat cooked in this way, the cooking apparatus (the “barbecue grill” or simply “barbecue”), or to an event where this style of food is featured. Used as an adjective, “barbecued” refers to foods cooked by this method. The term is also used as a verb for the act of cooking food in this manner. Barbecuing is usually done out-of-doors by smoking the meat over wood or charcoal. Restaurant barbecue may be cooked in large brick or metal ovens designed for that purpose. Great visit to Parma Ridge Bistro and Rollingstone Chevre

Rollingstone Chevre is still making cheese after their devastating fire that destroyed most of their facilities. Karen Evans, owner a prize winning chevre cheese maker, is super strong and will come through all of this tragedy a much stronger woman and friend! Click on the link for more information.
On the other hand, Parma Ridge Wine and Spirits keeps putting on a super Sunday Brunch. Today, it was packed!! If you are going, and you really need to, call for reservations, (208) 946-5187.
