We opened our doors August 28, 2015 — come by this weekend to help us Celebrate! We will be doing patio dining and wine tasting Friday thru Sunday this weekend. We will be featuring our famous Peach Sangria, Food Specials and a Prize Drawing. Customers will receive a ticket for the Drawing for each bottle purchased from August 28-30. Drawing for the Parma Ridge Gift Basket will be held at 4pm Sunday (you do not need to be present to win).

Reservations may be required in order to dine on-site. Dining hours are Friday & Saturday from 12-7 p.m. and Sunday from 12-4 p.m. limited to patio seating only.

James and Rochelle are father-daughter duo. James has been playing/singing for 42 years. Rochelle has been singing for over 20 years. They have been performing together for over 15 years. Kenny Lynde joined the band just over 4 years ago. They have a passion for taking a song and making it our own. Putting their own twist on each song is what we do and love to sing every genre of music!

RockIts were born in Boise Idaho in the summer of 2018. The band was born of love and mutual respect for roots rock and roll and hillbilly country. Featuring Telecaster Guitar, Doghouse Bass, and Drums. Three part vocals and harmonies covering everything from Johnny Cash to Elvis to Marty Stuart and Dwight Yoakam. If you love some Ladies of country music like, Loretta Lynn, Tanya Tucker you’ll be sure to enjoy this band. The band is comprised of members Jim Geranios, guitar and vocals. Nikki Barrett, vocals. Keith Dunn, drums and Russ Rawlins on bass and vocals. Between the four of us we have over one hundred years combined experience in the entertainment industry.

These are some fantastic Sunday Brunches! But call ahead to make reservations. They do get full and Busy! But then, that’s why they are a 5-Star Restaurant!! And we were lucky enough to receive and try some of their latest releases! Well worth joining their Wine Club. They do make an awesome Reserve Merlot, pictured here. And the Pinot Gris passes the test and goes well with asparagus!

It’s 4th of July Weekend! Bring your family and enjoy the wine and delicious cuisine on the patio. The Lucky Tongue Band, Friday, July 8 from 5-9 p.m. on the Parma Ridge patio. We had such a great time last time around, that we wanted to get them back on the calendar for a Friday evening. Wine will also be available to purchase by the glass and bottle that evening.
The Lucky Tongue Band, Friday, July 8 from 5-9 p.m. on the Parma Ridge patio. We had such a great time last weekend, that we wanted to get them back on the calendar for a Friday evening. It is sure to be a fun night of great music, wine and food! (call ahead if you’d like to reserve a patio table)

Spatchcock Chicken on a Char-Broil Grill


3April2016_1_New-CharBroil-Grill_BSU-CoverI have always liked Char-Broil grills. Well built and long lasting. The last one I had, a combination gas/charcoal grill lasted 10 years. This one, an American Gourmet Deluxe Smoker, BBQ and Grill from Char-Broil seems to work very well. The photo to the left is the grill with it’s BSU cover on it.

A spatchcock is a historical term for a culled immature male chicken, but increasingly denotes a preparation technique. The spatchcock, also known as “spattlecock”, is poultry or game that has been prepared for roasting or grilling by removing the backbone, and sometimes the sternum of the bird and flattening it out before cooking. The preparation of a bird in such a manner for cooking may also be known as butterflying the bird. The term “spatchcock” is used when the backbone is removed, whether or not the sternum is removed. Removing the sternum allows the bird to be flattened more fully…Barbecue (also barbeque, BBQ and barby/barbies) is both a cooking method and an apparatus. The generally accepted differences between barbecuing and grilling are cooking durations and the types of heat used. Grilling is generally done quickly over moderate-to-high direct heat that produces little smoke, while barbecuing is done slowly over low, indirect heat and the food is flavored by the smoking process…The word barbecue when used as a noun can refer to the cooking method, the meat cooked in this way, the cooking apparatus (the “barbecue grill” or simply “barbecue”), or to an event where this style of food is featured. Used as an adjective, “barbecued” refers to foods cooked by this method. The term is also used as a verb for the act of cooking food in this manner. Barbecuing is usually done out-of-doors by smoking the meat over wood or charcoal. Restaurant barbecue may be cooked in large brick or metal ovens designed for that purpose. Great visit to Parma Ridge Bistro and Rollingstone Chevre

Rollingstone Chevre is still making cheese after their devastating fire that destroyed most of their facilities. Karen Evans, owner a prize winning chevre cheese maker, is super strong and will come through all of this tragedy a much stronger woman and friend! Click on the link for more information.
On the other hand, Parma Ridge Wine and Spirits keeps putting on a super Sunday Brunch. Today, it was packed!! If you are going, and you really need to, call for reservations, (208) 946-5187. 15July2015_1_The-Buzz-BBQ_BottlesNow this was a different Monthly Wine Dinner with the Buzz Wine Club. One outstanding dish – Aussie Grilled Chicken Burger with Mexican Street Corn. I suggested to Cristi and Tommy that this sandwich go on the Bistro Menu. Tommy said maybe on special weekend events. Just let me know, I’ll be there. It’s that good. (See the photo below.) And I also thoroughly enjoyed the Mediterrean Grilled Chicken Salad. You did an awesome job Cristi and Tommy! Great menu. Enjoy these photos of the evenings festivities. Oh. You missed it? Australian burgers are built from the bottom up. Bun, pineapple, burger, beets, egg. Chili mayo and a pool of ketchup on the side. It is a riot of flavors, though, grounded by the rich base of the meat. The way the flavors blend together, is hard to describe.

(This is the sandwich I suggested to put on the bistro menu. It’s that good! The sauce on the corn is mayonnaise, sour cream, lime juice and just a touch of cayenne.)

“Fire Up the Grill” at The Buzz


buzz_logo_cafe_building_bestIn my not so humble opinion, this was by far one of the best Wine Club Dinners at The Buzz! Everything tasted so very good and the paring with the wines was superb. The Grilled Potato Soup with Bacon Bits was awesome. And the sauce on the pulled pork brought the entire dish together and made for a great entree. The Beer Can Chicken Salad was a refreshing and cooling dish on a hot pre-Summer evening – 99 degrees here in Boise. Many thanks to Peggy, Joseph, Michelle and “The Kids” for helping out tonight. Cristi’s Choice Wines were a 2009 Cold Springs Riesling [18] $10.00 and a Cellar 616 Red Blend [16] $16.00. Both Idaho wines! Here is what we had for dinner tonight and the wines that went with the selections. You won’t see me rate a Pinot Noir higher than a Zin. But tonight, I did!
